Watermelon Ginger Soup

1 Place the onion, garlic and ginger in a large saucepan with the water. Cook, stirring frequently, until onion has softened, about 3-4 minutes. Turn off heat.
2 Puree the watermelon in batches in a food processor and add to the onion mixture in the saucepan. Bring to a boil, reduce heat and simmer for about 3 minutes until slightly thickened. Pour into a covered container and chill for 3 to 4 hours until very cold. Mix in the fresh herbs and season with freshly ground pepper, if desired, before serving.
