Fresca Bean Salad

Serves:Makes 4 cups

Ingredients

  • 15 ounce can black beans, drained and rinsed
  • 1 medium carrot, shredded
  • 1/2 small red onion, minced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh cilantro, diced
  • 1 avocado, diced
  • 1/2 lime, juiced
  • 1 1/2 tbsp cumin
  • 1 tsp garlic granules or powder
  • 2 pinches or to taste cayenne pepper

Directions

In a large bowl, mix the beans, carrots, onion, tomato cilantro and avocado. Stir in the lime juice and spices. Stir well.
