Mango Salsa

Prep: 10 minutes

Serves:Makes 2 cups

Ingredients

  • 2 cups ripe mango, peeled and chopped
  • 1/2 cup onion, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 1 jalapeno, seeded, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 tsp garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp warm water
  • several twists freshly ground pepper
  • dash salt

Directions

Combine all ingredients in a bowl and mix well. Cover and chill at least 1 hour before serving. This will keep in the refrigerator for about a week.
