White Bean Pate

Serves:Makes 1 1/2 cups

Ingredients

  • 1 15 ounce can white beans, drained and rinsed
  • 2 tbsp vegetable broth
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1/2 tsp minced fresh garlic
  • 1/4 tsp salt
  • 1/8 tsp white pepper
  • 2 tbsp drained capers
  • 2 tbsp finely chopped fresh parsley or cilantro
  • paprika

Directions

Place the beans, broth, lemon juice, mustard, garlic, salt, and pepper into a food processor or blender and process until smooth. Place in a bowl and stir in the capers and parsley or cilantro. Sprinkle the paprika over the top to garnish.
