This is a very unique salsa that Scott says is a winner!
- 6 carrots, grated finely
- 1 small green pepper, minced
- 2 medium scallions, minced
- 1/2-1 cup chopped cilantro (or to taste)
- 1 jalapeno, seeded and minced
- 1/2 cup pure apple juice
- 2 tbsp lemon juice (about 1/2 lemon)
- 2 tbsp apple cider vinegar
- 1 1/2 tsp cumin
- 1/2 tsp salt (optional)
Combine all ingredients and adjust to taste.
