Potato Burritos

Ingredients
6 Cups
Chunky Enchilada Sauce

Whole-wheat tortillas or 12 to 14 soft corn tortillas
3 Cups
Mashed potatoes
1 Cup
Scallion, chopped
1 Cup
Frozen corn kernels, thawed
14 Ounce Can
Green chilies, chopped

Preheat the oven to 350 degrees F.

Spread 1 cup of the sauce over the bottom of a casserole dish. Spread a line of potatoes down the center of each tortilla. Sprinkle on some scallion, corn, and green chilies. Roll up and place, seam-side down, in the casserole. Repeat until all of the ingredients are used. Pour the remaining sauce over the tortillas. Cover and bake for 30 min, or until the sauce is bubbly.
