Asian Greens

Ingredients
2 Large Bunches
Kale, Swiss chard or Collard greens (about 2-3 pounds)
Asian-Dijon Dressing:
1/4 Cup
Soy sauce
1/4 Cup
Rice vinegar
1/4 Cup
Water
1 Tbsp
Dijon mustard
1/4 Tsp
Fresh garlic, minced
1/4 Tsp
Fresh ginger, minced
Directions

Chop kale, Swiss chard or Collard greens. Place in a large pot with about 1/3 to 1/2 cup of water. Cook over medium heat stirring occasionally, until wilted (about 5 minutes). Drain and toss with Asian-Dijon Dressing.

Asian-Dijon Dressing: Combine all ingredients in a blender jar and process until smooth.
Hints: Heat the greens mixed with the dressing briefly after tossing. This is also great chilled for serving later.
