Homemade Low-Fat Vegan Mayonnaise

Ingredients

  • 2 slices hearty white bread, crust removed
  • 1/4 cup vegetable stock
  • 1 pound silken tofu
  • 2 tbsp Dijon mustard
  • 1 tbsp roasted garlic
  • 1 tbsp lemon juice
  • 4 tsp Champagne vinegar
  • 1 tsp salt
  • 1/8 tsp white pepper

Directions

Soak the bread in the vegetable stock. Place the silken tofu in a blender or food processor and let it run until the tofu is smooth. Add the rest of the ingredients and process until smooth.
