Vegetable Salad

Ingredients

  • 4 cups lettuce leaves, torn
  • 1 tomato, chopped
  • 1 stalk celery, chopped
  • 1 green onion, finely chopped
  • 1/2 cup English cucumber, chopped
  • 1 small avocado, peeled and chopped (optional)
  • 3 radishes, finely chopped
  • 3 tbsp orange juice
  • 1 tbsp lime juice
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 2 tbsp cilantro, finely chopped
  • 4 ounces smoked, baked tofu, chopped

Directions

Combine vegetables in a large bowl. Mix juices together, whisk in chili powder and cumin. Add cilantro and mix again. Add tofu to vegetables, pour dressing over and toss to mix. Let rest 2 minutes, toss again and serve.
