I generally eat 4 meals and sometimes a piece of fruit for a snack at some point in the day. I exercise a lot, so I eat a generous amount of food over the course of a day. And I practice what I preach: eat when I’m hungry and stop when I’m comfortably full!
Breakfast: Oatmeal with 1 tablespoon of ground flax, 1 tablespoon of cocoa powder, blueberries and some soy milk on top.
Lunch: Air-fried slices of polenta (from a tube) topped with black bean and veggie soup.
Mid-afternoon meal: Large sweet potato and strawberries.
Post-gym snack: A banana.
Dinner: A very large entree salad with greens, hearts of palm, sun-dried tomatoes, red peppers and about a cup of brown rice. Sunflower-based dressing made by my husband.
