Sweetest Quinoa Bites

Ingredients
1/2 Cup
Quinoa
1 Cup
Water

Dates, pitted

Dried figs
1 Tbsp.
Hazelnuts
1/2
Banana
2 Tbsp.
Almond butter
To Taste
Goji berries, chopped
To Taste
Dark chocolate bits
To Taste
Hemp seeds
To Taste
Chia seeds

Combine water and quinoa in a saucepan. Bring the mixture to a vigorous boil. Lower heat and simmer, covered, until quinoa is tender but still chewy and white spiral-like threads appear around each grain, about 15 minutes. Set aside and let cool down for a few minutes.

Meanwhile, place the dates, figs, and hazelnuts in a food processor and pulse until finely chopped. Transfer the mixture to a bowl. In a small bowl, mash the banana with the almond butter until smooth, then add it to the bowl along with the quinoa and mix well until everything is evenly combined. Using a spoon or small scoop, shape the mixture into 1-inch balls. Place your desired toppings on parchment paper and roll the balls in the toppings to coat.
Chef’s Note: These can be refrigerated for a few days.
