Soldier Bean Soup
I found these wonderful, heirloom beans at a market last week and decided to make a simple soup from them. They cook up rich and creamy with a unique taste so they don't need much in the way of seasonings.

Directions
1 Place all the ingredients in a large pot. Bring to a boil. Reduce heat, cover and simmer for 4 hours or longer, stirring occasionally. Season with salt and pepper before serving.
Hint: This may be made in a slow cooker (Crock-Pot). Cook 8-12 hours on high. An easy way to have a delicious dinner ready when you get home from work. This may also be made with other heirloom beans. Heirloom beans are specialty beans that have wonderful flavors and colors, not commonly found in the mass-markets.
