Country French Toast

1 Blend cashews with 1/4 cup of water first. Then add remaining ingredients except the bread and process until very smooth.
2 Transfer to a large bowl. Dip slices of bread into the mixture to coat both sides well. Cook on a dry non-stick griddle until brown on both sides. Serve with maple syrup, applesauce or fruit.
