“Cheese” Sauce

Serves: Makes 2 cups

Ingredients
1/4 Cup
Cooked, peeled potato
2 Cups
Water
4 Ounce Jar
Pimientos
1/4 Tsp
Onion powder
1/4 Cup
Nutritional yeast
3 Tbsp
Cornstarch
2 Tbsp
Fresh lime juice
Optional
Salt to taste
Directions

Blend the potato with 1/4 to 1/3 cup of the water in a blender. Add the remaining ingredients and blend until smooth.

Pour into saucepan. Cook, stirring, until smooth and thick, 7 to 8 minutes.

Serve at once. The sauce will set when cool and can be reheated.
