Breakfast Apple Rice

Prep: 10 minutes (cooked rice needed) Cook: 45 minutes

  • 2 cups cooked brown rice
  • 1 apple, cored and chopped
  • 1/3 cup apple juice
  • 1/4 cup pure maple syrup
  • 2 tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon


Preheat the oven to 350F.

Combine all the ingredients in a casserole dish with a cover.

Bake in a conventional oven for 45 minutes or in the microwave oven for 10 minutes at full power, stirring once halfway through the cooking time.

Serve hot.
