It's great that you have someone you're doing this with! and that potato/refried bean/tomato thing sounds just yummy. Keep on going!

Been sticking to it pretty well, it really helps having a buddy to report to
Like last night, I really wanted pizza, but had oatmeal with mushrooms and onions instead

I've lost 20 pounds since May 28th
I could lose faster, but I do allow a few cheat meals to sneak in, and I am working on that.
Still working with an accountability partner. She has lost 25 pounds
Good article on satiety from True North...

I made some homemade split pea soup today. It turned out good

1 can (15 oz) veggie broth
2 cups green split peas (I threw in a little more to finish it off)
6 cups water
1 large onion, chopped
12 baby carrots, chopped
3 stalks celery, sliced
1 yukon gold potato, chopped
1/2 tsp, thyme, rosemary, and oregano
1/4 tsp black pepper

Brought everything to a boil, then lowered heat, covered and simmered for almost 2 hours
When done, I added 1 tsp salt

Served with great harvest honey wheat bread

It turned out good

I noticed on Dr Greger's website he is looking for volunteers
http://nutritionfacts.org/volunteer
I just got his new book, looking forward to reading it

.........

Made it to the gym today. YAY
It always feels so good when I'm working out...

Hi Beth! *waving*

I haven't had a chance yet to catch up reading all the journals. So glad you still post here and I look forward to catching up! I need to get with it.

Your split pea soup recipe sounds right up my alley!

Hi Lizzy

Thanks Robin and welcome to the boards

.....

I have started to use my exercise bike more. The thing that is helping me is you tube.
I did a search on you tube for indoor cycling videos and then I bring them up on my big screen TV using my ROKU box
and watch while cycling. It is just like being there. I have cycled through New York central park, Cayman islands,
St Thomas, scenic upstate New York, etc...
It makes the time go much faster.

Now if only I could find something like that for the treadmill at the gym! Great idea.

I've been making these and they are pretty good. I don't worry about cutting them in fry shapes, I just cube them if they are small or slice them if they are larger. They seem to turn out pretty good. The spices actually stick to the potatoes.

Crispy Oven Baked Fat Free Potato Fries

I usually use parchment paper, but I just bought a few sil-pat silicone baking sheets, so I will try those next time.
