Quinoa Stir-Fry With Tahini And Avocado
This quick and easy dish uses 'stir fry' frozen vegetables, along with fresh ginger and garlic. Frozen veggies can be a healthy and delicious meal addition.

Ingredients
1¬Ω Cups
Water
¾ Cup
Uncooked quinoa
1 Teaspoon
Granulated onion
¬Ω Teaspoon
Curry powder (for quinoa)
1 Bag (16 Ounces)
Frozen stir fry blend vegetables
1 Tablespoon
Minced garlic
1 Teaspoon
Minced fresh ginger
1 Teaspoon
Curry powder (for seasoning)
2 Tablespoons
Tahini
¬Ω Of An Avocado (optional)
Avocado
To Garnish (optional)
Sesame seeds
Directions

Rinse quinoa; combine with water, granulated onion, and ¬Ω teaspoon curry powder in a saucepan and bring to a boil, then reduce heat and simmer until quinoa is tender and water is absorbed, about 15 minutes.

Meanwhile, in a skillet, heat the frozen stir-fry vegetables with minced garlic and minced fresh ginger until heated through and tender.

Stir the cooked vegetables into the quinoa, add 1 teaspoon curry powder, tahini, and mashed avocado if using; mix until combined and creamy.

Garnish with sesame seeds and serve.
Notes: I use a ‘stir fry’ blend with this recipe, but any 16-ounce bag of frozen vegetables may be used. Also, feel free to toss in any favorite fresh vegetables, too, such as zucchini, cabbage, greens (kale, chard, spinach), or green onions.
