Baked Yams
By Mary McDougall
This is a favorite dish at The McDougall 10-Day Live-In Program and I always get requests for the recipe. It is simple to prepare and keeps well in the refrigerator for reheating later.
Serves: Varies
Prep Time: 5 min
Cook Time: 60 min
Ingredients
Garnet yams (reddish skins and a deep orange flesh)
Directions
1
Preheat oven to 350 degrees.
2
Scrub the yams and cut into large pieces (quarter the yams unless they are very large).
3
Place in a single layer in a dry baking dish, skin side down. Cover with a silicone baking mat to hold in the steam. Bake for 1 hour, 10 minutes.
Hint: These are delicious with Peanut Dressing (recipe in Dressings & Sauces).
