Central Chicago Restaurant Advice Needed

I'll be in an Amtrak sleeper car from Denver to Chicago this Sunday. That basically means baked potatoes for every lunch and dinner on the train. I bring stuff for breakfast as their menu is awful for that.

I will be in Chinatown, The Loop, Streeterville, and River North. I was looking for Mexican food that isn't all larded up, stuffed with queso, etc. With Chinese I could live on steamed vegetables and tofu and rice. No luck with my online search so far. I will use Happy Cow when I am there.

Any suggestions?

It was so much easier when I didn't care what I ate!
