I haven't taken the instant pot out of the box yet, I'm waiting for a day when I have some time to really look it over and read the info on it.
I did find a recipe I want to try, though
It looks simple and easy, which is my main criteria in searching for recipes
-Instant Pot Vegetable Soup-Today I did an experiment.
I water sauteed a large onion (chopped) with one stalk of celery. Then added a bag of riced cauliflower I had in the freezer. Spices: 2 tsp curry (Trader Joe's) and 1/2 tsp ginger., a few shakes of cayenne and black pepper. Once it was heated through, I chopped a banana and put that in and heated a little, just to give it a little sweetness. It turned out pretty good. Next time I would put less pepper, and maybe include chopped green pepper and/or snap peas...
For lunch I made baked potato fries. I chopped 5 potatoes into wedges, put them in pot, brought to boil, boiled 5 minutes
Then drained them, returned to pot, added spices (2 tsp garlic powder, 2 tsp onion powder, 2 tsp oregano, 2 tsp rosemary, 1 tsp thyme). Shook the pot a few times, poured onto cookie sheet lined with silpat and baked at 400 for 45 minutes. I sprinkled a little salt on them when they were done. Just perfect. Crunchy on the outside, and soft and moist on the inside...
YUM. It was too much for lunch, so I'll have the rest for supper
