I've got to say, the thought of eating veggies has become exhausting. It's getting to the point where I am considering skipping a meal/snack so that I can take a rest from eating all the vegetables - and I love vegetables!! Despite not losing weight (according to my maybe-messed-up-scale) I find myself feeling full by the time I get to eat my starches. This is exacerbated by the fact that I am already a slow eater. I've seen somewhere that at least one other person felt the same, and the advice for them was to eat less of the soup/salad/fruit and take a smaller portion of veggies and starches for the 50/50 plate. I will give that a go, though I worry it will worsen my already sorry weight loss.
I am continuing to push ahead with C25K and managed to sneak in an extra 5 minutes of running at the end of my 'scheduled' runs - so, pretty pleased about that. :)

Took a day off from the running today, and looking forward to starting week 3 tomorrow. By the time I begin week 4, I am planning to stick with the routine for 6 days instead of 3, in order to build up my stamina - particularly because I am not taking the prescribed day off in between runs, only 'weeks'.
Still eating lots of delicious starches and tons of veggies with the scale doing whatever the heck it wants!! I am planning to continue MWL for the next month, and then I will reevaluate my plan. At the end of June, I told my husband that I would either succeed with MWL and lose weight, or find that nothing really seems to work for me and embrace my normal WFPB life style and return to enjoying nuts and avocado - either way I win! So, for now, I will press forward and continue with MWL for another 4 weeks.

Started Week 3 of C25K today and feeling good about it. Our dinner tonight was delicious and I enjoyed it, but not too much! The only worrying part to me is that we marinated the portobello mushrooms in liquid amino's which have a higher salt content. I forgot to weigh in today, so I will have to post tomorrow morning to the final July MWL board.

Well, I've officially completed a full month eating MWL. Overall, it has been a rewarding experience, and I enjoy going to bed not berating myself regarding my eating habits for the day. Still, as a perfectionist, being unable to weigh/track (and my scale issues) have caused me frustration as I am unsure that I am eating the correct amount. That being said, I will plough ahead and continue with MWL for the month of August. My son's birthday is on the 25th (8 years old!) and I am planning to indulge for his birthday dinner (vegan fondue). Thankfully, a single meal has never been the cause of my derailment - as long as it excludes peanut butter!! :lol:

Finished week 3 of C25K and planning to repeat the sequence one more time before moving on to week 4. Looking forward to a hike with friends and family tomorrow. One more week before I'm back to school to prep for the upcoming year.

Got to go on a wonderful 5.3 mile hike today at the Skunk Canyon Trail. Was pleased to find that the trail wasn't over-crowded and that we managed to avoid bear encounters! Brought a lunch of oatmeal along, as it seems to be one of the easier meals to eat while hiking.

Another lovely day in Colorado! Just enjoying time outdoors with the family until we return to (in-person) school. I am hopeful that we will return to virtual learning before too many of our school community become ill - also, it will afford us the opportunity to better enjoy the fall weather.

Hi bunsofaluminum! Hiking in Colorado is the best - it's why we moved out here 6 years ago! I'm loving all the food we are eating, but still manage to second-guess myself about the quantity of food I enjoy... I am most definitely looking forward to my son's birthday (and all the treats that will go along with it) and planning to only indulge for dinner/dessert!! Here's hoping we can make it full of joy despite COVID keeping us locked in :-)

Another beautiful day here in Colorado with my boys. We took it easy this morning and did some watercoloring. This afternoon I went for a run while the boys rode their bikes across the open-space.

Spent the last 24 hours at RMNP - great way to end the summer before starting back at school tomorrow. On our way back into Boulder we did stop at our favorite Indian Restaurant and I enjoyed some Roti (oil free) along with Aloo Gobi (likely not oil free). I did, however, give the Onion Baji to my son.
