Just keeping on .. Things are going pretty well. I was super hungry last weekend, so cooked up a whole pot of quinoa and steel cut oats and ate them all.

Back on track yesterday and today with lots of veggies. I ate a whole pound of spinach yesterday in the morning, with corn on the cob.. Then a bunch of potato waffles for lunch and dinner, and raw zucchini chips (a little over a pound)

Today starting with a pound of spinach, some oatmeal with peaches, then potatoes for lunch and supper with sliced green pepper and special sauce, running out of fresh veggies, need to get to the store, but today is a work day, so will make do with what I have..
Special sauce:
I discovered I like dijon mustard with minced garlic and hot sauce, I also add a little water to thin it out, and use this as a dressing over potatoes, nice and spicy...

Down another couple of pounds for a total loss so far of 56.4

Now fitting into size 10 (even a few size 8's), haven't worn this since my 20's.

Update
Now down 57 pounds

I have not had to take an imitrex for migraine since February

I still get headaches, but not as often, and I can get by with a couple Tylenol or Excedrin. It's nice to not have to use the prescription meds. The pain used to be so debilitating that I had to miss work, now I can work through a headache if I have to. So it's a big change.

Down 59 pounds :) :)

Had a great time yesterday at Spokane Vegfest

Heard an interesting story from one of the speakers...
He lost weight eating plant based no oil and walking his dog. Looks great. He feeds his dog vegan dog food and provided a few recipes.. His wife also lost a lot of weight. Video of him below

Down 62 pounds!!

I still mess up occasionally, like Sunday at a restaurant... ordered something completely off plan. I think I had allowed myself to get too hungry before I went.. Got to remember to pre-eat!

Anyway, most days eating pretty simply..
In the mornings I usually start with veggies and follow it later with oatmeal and fruit or some other starch like rice or potatoes or yummy delicata squash...
Lunch and dinner are things like brown rice, beans, and pico de gallo ... or sweet potatoes and veggies....
If I want "dessert" I occasionally will chop either an apple or a peach, put in a tablespoon of water, top with a little oats and cinnamon, cover and microwave for 5 minutes. It makes a little cobbler.

By the way I tried cooking brown rice the way Jeff Novick recommends and it turned out really good. It was super easy to do.
I drained it in a regular pasta colander after cooking and rice did not come through the holes... It's a newer colander, and I think it has smaller holes than some older ones I have had in the past...

Well, as I get closer to goal, my weight loss is definitely slowing. For one thing, I am weight training, which is helping with
my back pain, but not so much with weight loss on the scale. I do feel like my clothes are fitting better, but in the past 30 days the scale says I have lost 0.4 pounds. So this is why the scale is not your friend! I know I'm doing the right things, just have to keep it up

Non scale victory: I actually have to use the drawstrings on my workout pants. I always wondered why they were there before. :lol:

This morning I enjoyed a video by Dr Neal Barnard that was shared on Nutmeg Notebook's facebook page. He is such a good speaker

I ordered a t shirt from this website that says the secret to slim is veggies and starch. They are pretty cute

I downloaded 3 android apps to see which one I like best for tracking habits/goals. I'm going to track 10,000 steps, one more (compliant days), daily bible reading, and minimum 12 hour fasting window between supper and breakfast. The apps I'm experimenting with are Habit hub, Goal tracker & habit list, and Loop habit tracker. I'll let you know which one I end up keeping
