Dr McDougall and Mary and his son Craig will be speaking at Healthy Taste of Sacramento and you can listen online to the whole day of lectures. The live in person tickets are $149 but to watch online is only $49. and there will be replays available if you can't watch live.

So today I weighed in and have lost 45 pounds since I started June 2015 and have 25 more to go to goal. I am basing my goal on an article Jeff Novick did a while back on healthy BMI ranging between 18-22. 128 would be BMI of 22 for me... We'll see if I can get there :)

I'm already having people tell me I have "lost enough" and to "not lose anymore"

Today I had carrots and yellow squash and then a bowl of oatmeal with papaya and blueberries

I have lunch and supper at work and I am taking 4 yukon golds I cut up and microwaved in my potato express bag along with the artichoke stew I mentioned above. I haven't tasted it yet, so I hope it's good, since it will be my next two meals... It smells good, anyway

I have a little papaya and blueberries left and will have that with my supper

Made these yesterday. I like having them in the freezer to pull out when I need a quick snack or meal replacement
I've started doing 1 tsp cinnamon and 1 tsp pumpkin pie spice... and yesterday I doubled the recipe and put it in a 13 x 9 pan


Breakfast Bars


Ingredients:
1.5 cups oatmeal
2 tsp cinnamon
2 bananas
1/2 cup apple sauce
or 1 apple, finely chopped in food processor
1/3 cup raisins 
2 tsp vanilla extract

Instructions:
In a medium bowl stir together the dry ingredients: oats and cinnamon. In a separate, small bowl, mash the 2 bananas and stir in the apple sauce. Mix until combined evenly. Transfer the wet mixture to the bowl of oats. Add the raisins and stir until all is properly combined. Bake in 8x8 pan for 30 minutes at 350

Things are going pretty well.

Last weekend I was not feeling well and had a few "off plan" foods, but Monday I rebounded and got right back in to the swing of things.

This week I have been working on using more salt substitutes instead of salt and soy sauce. I have finally gotten so I like Benson's table tasty. I did not like it at first, so I guess my tastes have changed a little. I went online and ordered a 6 pack of their spices so I could try some other flavors.

I am roasting a beet in the oven. I remember when I was a kid I hated them, but want to give them another chance, so roasting at 325 for 1 & 1/2 hours. We will see if it is any good. I have been trying lots of different fruits and veggies since I got stricter last July

and by the way, the artichoke stew recipe I linked a few posts above turned out really really good. I highly recommend it. Loved it

I have pickled beets fairly regularly or beet soup ( Borscht ). Let me know how roasting them turns out. :) This is a pretty good recipe if you find you're enjoying beets. http://hellyeahitsvegan.com/borscht/ Although it's often served cold, I like it heated.

Borscht
Cook time: 1 hour Total time: 1 hour
Serves: 6-8

Ingredients
4 potatoes, peeled and chopped
5 c water
6-8 large beets (around 3" in size), halved
4 c vegetable stock
1 onion, peeled and quartered, but with the root end intact
2 Tbsp fresh lemon juice
1 Tbsp sugar
1 tsp salt

Instructions
Boil potatoes until tender; drain liquid and refrigerate until well chilled.
In a large pot with a heavy bottom, bring water and beets to a boil.
Once water is boiling, reduce heat and simmer beets just until tender.
Turn off heat and remove beets from pot, retaining the liquid.
In a food processor, shred beets.
Return shredded beets to pot.
Add stock and onion to pot and bring to a boil.
Reduce heat and simmer soup for 40 minutes, or until onion is tender.
Add remaining ingredients and simmer for an additional 10 minutes.
Remove onion and adjust salt, sugar and lemon juice to taste.

Okay, so I did not love the beet experiment. I only ate about 1/4 of it.

I will try again in a few weeks and maybe use the recipe above or something to mask the flavor a little better

On a high note I have a non scale victory to report!
