Thursday's Meals

B: Puffed rice cereal with banana and almond milk,
1 slice GF raisin toast

L: Cabbage potatoes, onions & carrots, slice GF bread

D: Same as lunch

Snacks: GF rice crackers with flax
Rice pudding

Friday's Meals

B: Puffed rice cereal, banana, almond milk

Snack: Microwaved apple slices with cinnamon and toasted oatmeal on top

Lunch: Ratatouille, curly pasta

Snack: Black bean brownie

Supper: Bean sandwich, GF rice crackers with flax

I love following your journal. You are an inspiration to me. I am working on making a good gluten free bread. I made one before, it tastes really good, but falls apart for sandwiches. So I found another recipe and am going to try it tonight or tomorrow. I will let you know if it turns out good. There are no good gluten free breads without eggs at the stores. I am excited to see how your starch challenge turns out.

Thank you for visiting my journal. I have quite a few gluten-free cookbooks. I got most of them at a place called Half-Price Books that sells overstocks and used books. Plus I can pick up Gluten-Free Living Magazine and Living Without Magazine at my local grocery store. So I have many GF recipes. Recipes for GF bread that has no oil or eggs are scarce, but I have a few. Also I recommend, "The Idiot's Guide to Gluten-Free Vegan Cooking," by Julieanna Hever and Beverly Lynn Bennett. http://www.amazon.com/Complete-Idiots-G ... 139&sr=8-1

Thanks for the tip on the recipe book I think I am going to order that one, it seems to get lots of good reviews from people using it. Not just here but out on the web.

Thanks for stopping by. I got some new arch supports for my shoes and they are helping a lot. I am also going to order a brace for my achilles tendon until it gets better. It's just a matter of time. I can't walk outside anyway with all the snow and ice right now.

Weekends are always hard for me. My husband always wants to go out to see a movie and eat at a restaurant. It's his way of relaxing after working hard all week. He hits the snack bar first thing. Sometimes we go to AMC movies and I can get a fruit or veggie bowl, but if we go to another theater I can't. It is so tempting to buy unhealthy snacks. Also it's difficult to find a restaurant that will fit the McDougall program. I know I have to figure out how to do it and still go out with my husband, but it's difficult.


Sunday's Meals:

B: GF Pancakes (McDougall friendly)

L- Roasted vegetable salad with FF dressing (at California Pizza Kitchen)

D- OLT sandwich

Snacks: Chocolate covered pretzels at the movies (my bad :( )

L- Asian vegetables, brown rice, orange slices

D- Vegetable pot pie, lettuce & tomato salad

Snacks: homemade GF and fat-free blueberry muffin, homemade GF and fat-free brownie.

Well Happy Birthday to one of my favorite guys: Neil Diamond! He is 71 yrs. old today. :-)

Yes Neil is an old geezer and I am in his geezer fan club. Ha ha. :lol:

Neil Diamond is still touring and giving concerts all over the place and hubby and I are going to one of his concerts here in Ohio this summer.

I have a sparkly dress that's been hanging in my closet for a long time (actually since the last Neil Diamond concert I attended) that I want to wear. Fitting into that dress for the concert will be a good short term weight loss goal for me. :D

Tuesday's Meals:

B: GF Whole O's cereal, 1/2 banana, almond milk
Snack: Homemade GF, fat-free blueberry muffin
Lunch: GF pasta with homemade sauce, slice of eggplant cooked in non-stick skillet, tossed salad
Snack: 1/2 c. non-fat rice pudding
Dinner: Black eyed peas, green beans, GF, fat-free cornbread

I have lost about 60 lbs and never thought I'd be in the 150s ever again. cured my NAFLD!! Feel great!! Wt loss is so good for the knees and back, ankle, that I know I will never start back to the SAD way of eating again.
