No mayo potato salad recipe - with pickles

Hi all,

I made this recipe yesterday and will take a few more servings to work this week.
I remember having pickles in the potato salad I had growing up in Texas. But hadn't found a mayo free version that did not require removal of multiple items.

This one worked. I skipped the oil - but did use a tablespoon of Trader Joe's garlic hummus. I used almost a whole package of organic dill. I used Trader Joe's cornichons - which I think had more flavor than regular dill pickles. For my taste it could have used more cornichons.

This was good - I will make it again. And will also take to pot lucks.

Sounds delicious. I purchased so many potatoes in preparation for hurricane Lane I will certainly make this. I have 5lbs of potatoes cut and soaking in water in the refrigerator ready to be cooked.

Update... this morning I pressured cooked some potatoes and made the "No mayo potato salad recipe - with pickles". I used agave instead of the honey, and I didn't have any fresh dill, but I will pick up some today. It was delicious though with just the dill seasoning.

I love watch Jane and Ann Esselstyn on Youtube. They made this potato salad with apple sauces. At first sounded gross. But I tried it and love it I might put pickles in it next time. Hubby liked it too but he likes lots of vinegar in his potato salad.

I’m making this and was wondering - do you think it would taste good without sweetener? I generally don’t cook with any.
