I made this recipe yesterday and will take a few more servings to work this week.
I remember having pickles in the potato salad I had growing up in Texas. But hadn't found a mayo free version that did not require removal of multiple items.
This one worked. I skipped the oil - but did use a tablespoon of Trader Joe's garlic hummus. I used almost a whole package of organic dill. I used Trader Joe's cornichons - which I think had more flavor than regular dill pickles. For my taste it could have used more cornichons.
This was good - I will make it again. And will also take to pot lucks.
