New recipes

Made two new recipes this morning to have for meals the next two or three days.

One is a potato barley soup, which I modified to use veg broth and also added celery.

The second is hearty chili mac, which I cut down the quantity and didn't have a bell pepper. Added some cayenne pepper as well.

Later I'm going to make roasted chickpeas. Yum!

Meals for Monday 1/24/11

B- hash browns with bbq sauce, soy patties, banana
L - potato barley soup, rye toast, orange
D - oven roasted potatoes with ketchup

Made the chickpeas yesterday. The potato barley soup is good, and I also made chili mac, which I plan on taking to work for lunch. I'm going to be making chips today and oatmeal in the rice cooker for the next 2 days breakfast.

Meals for Tuesday 1/25/11

B -hash browns with bbq, kiwi, soy patties
L - hearty chili mac, sliced tomato
Snack -chips with salsa
Forgot to add as snack steamed broccoli with dill tahini sauce from Veganomicon.

Didn't eat dinner. Wasn't hungry and I'm going to bed real soon now because I have to get up at 2:30am.

Made chips and oatmeal today. I was really impressed with the chili mac from Nutrition MD. Having that for lunch tomorrow.

Meals for Wednesday, 1/26/11
B - oatmeal with cinnamon and agave, soy patties, banana
Snack - chickpeas, chips with salsa, rye bread with fruit spread
L - chili mac, orange
D- mashed potatoes and ff gravy

Doing well so far. I just wish working wouldn't tire me out so much.

Had a slip today. Here's my food for today

Thursday 1/27/11
B - cereal with soymilk, soy patties, banana
Snacks - orange, rye bread with fruit spread, chickpeas
L - Lentil soup
D - grilled chicken breast and fries :x

I've got everything ready for tomorrows meals. Last night I was wiped. At work in ten hours I answered 400 phone calls. So I didn't prepare. I'll work on that.

Don't worry though, it was just a small step off the path, and I'm back on it now.

Cooking ahead again

Doing some cooking this evening for tomorrow. I wanted spaghetti again, and I've been watching my Jeff Novick Fast Food DVD.

So I made my usual tasty marinara, then I turned it into pasta primavera! Not exactly like his and I made somewhat less. But I put in a half bag I had in the freezer of fiesta veggies, a mix I really love. A little frozen spinach and some green beans. It looks lovely. And I have all 5 of his items, tomatoes, some beans in the fiesta veggies, not a lot though, veggies, greens, starch and spices.

I had to make the marinara first because I don't like big chunks of tomato in my sauces, so I used the immersion blender on it first. Lots of good italian spices too!

I'm also making some tortilla chips in the oven. I'll be ready for work tomorrow!

d - hummus and tomato sandwich on rye, the little bit of leftover chili mac

Week in review

I lost 1 pound this week, which is good. I still have a problem with my blood pressure meds, so I bloated up about 4 pounds this week. It seems to mostly be gone though.

My blood sugars are still in the 140-150s. I'm hoping they will drop more soon. I am a bit concerned with my blood pressure though. Without my pills, it's up in the 175/105 area. It's not really coming down much.

I'm doing my grocery shopping today. My list is short, mostly fruit and some canned tomatoes. Another local store has 8 pounds of navels for 4 bucks. I'm loving those.

I'm going to post more later about my plans for the next month.

Sorry to hear about the difficulty you are having getting your BP pills refilled. Hope that resolves itself as quickly as possible!

You have done a great job and your menus look great! How long has it taken you to get this far? 63 lbs is amazing. :D

fulenn, thanks for stopping by! I'll call my doctor tomorrow and see if she'll just do what I want her to do! :nod:

The 374 is my all time high, in August of 2008. My scale at home errored out over 350. At the time, I was working starting at 4am and at work we had a digital scale used for weighing people in wheelchairs. When I saw what I weighed, I was shocked.

Now, about 40 of those pounds was lost in the ravages of undiagnosed diabetes. Not a good way to lose weight. The rest though has been through my eating better and trying to exercise.

February's plan

My partner is going away for a month on a business trip. That sucks. However, it does give me an unparalleled opportunity to really establish healthy habits with no outside temptations.

On work days, I am going to get up at 2am. Shower, weigh, do a 20 min tai chi routine, check my blood sugar. At 3, get my food packed and then get dressed for work, out the door about 3:25 or so. I eat my breakfast at work.

I get home about 3pm, make a SNAP meal, do dishes, prepare breakfast if necessary, and put leftovers up for lunch. Bed by 6:30 at the latest.

On my days off, same routine except more flexible on the times. ;-). This will start on 2/4 and continue till 3/5, one day before she comes back.

And I have promised myself NO CHEATING AT ALL, period.

L - ww penne with snap pasta primavera

No snacks today, and no dinner, I wasn't hungry, and I went to bed fairly early.

I went to see Forks over Knives downtown today, so with walking to and from bus stops and to the theater, I got some exercise today too!

I am kind of surprised about not being hungry. But hey, it's working so I'm happy.
