I'm dredging this old journal up. I can't believe I started it in 2010! And last posted on it in 2015 ... until today.
I have been doing GREAT! I feel good! I'm at a healthy weight (vs being crazy underweight)! I'm living life! Yea!
But I'm doing all that on Plaquenil (technically hydroxychloroquine - but who can spell that!
). My rheumatologist tells me I will be on it for the rest of my life, but I really object to that! I'm convinced that at least one of my "safe" foods during my long elimination diet must have been a trigger food. I've reduced my dose of Plaquenil to the point that I can feel my joints when I wake up in the morning, and ........
....... I'm considering starting a new elimination diet with ONLY butternut squash to begin (I've often wondered if the brown rice or yams, my staple starches, are an issue). This morning I looked for frozen squash at Sprouts, Walmart, Costco, and Aldi's. Couldn't find any!! I don't want to make the drive to WF or TJ's on a regular basis so hopefully I can find some at another grocery store near me. I'm also thinking I may have to buy some whole squash to cook in my Instant Pot. I know I will have to have a LOT of squash on hand because I eat ALL the time!
I will probably start a new journal if/when I do this.

Currently I eat a lot of brown rice, carrots, kale, yams, gluten-free oats, raisins, bananas, apples, and blueberries. Those are my staples, but I also eat refried beans on corn tortillas with lettuce and cucumber (nightshades are out for me). I also eat split pea soup - I recently traded in Amy's for homemade. I also eat collard greens, corn, and broccoli. And a few other things, but those are the things I eat most.
