Eating enough

Hello... just getting settled into the basics. A few years ago I had a stomach infection and only recently have seen improvements in my energy and health. Partially from cell salts and I believe also from going about 80 percent vegan the last few weeks.

My biggest problem, without resorting to more fats or junk... is getting enough calories. I can only eat so much in one sitting and trying to eat a cup of rice and a cup of veggies together, for instance, is a feat by the end. Today I did mongolian grill and only ate some rice noodles, veggies and a little bit of brown rice and was glad I had to walk around to get it digesting.

Anyway, any advice on eating enough without maybe trying to eat every two hours? If I eat an entire good sized potato I KNOW I'm going to be full for hours.
