My only frustration is that this knowledge was not presented to me decades ago and neither of my Drs. can speak to me about my new lifestyle because by their own admission they have no nutritional knowledge or education!

I do not cook with oil at all. I eat 3 servings of fruit everyday. Love oranges, apples and berries. I also have a handful of flax seeds or flax seed powder (the best source of omega 3 oils) on my rice or oatmeal. The more fiber you eat the better off you will be. Eat leafy greens as the chewing process enhances the body's ability to make nitric oxide which is vital for blood flow. Sweet potatoes and regular ones are your friend!
