Homemade seitan

I was hoping to make homemade, no-oil, low salt seitan Italian sausages for my dad's upcoming birthday. Would having 1 of the "sausages" be MWL compliant since it has wheat gluten?

Dr McDougall barely allows a tiny bit of seitan for his patients without health conditions or having weight to lose because of its high protein content, and it would definitely not be allowed on MWLP because it's a processed food product.

Why not take Jeff Novick's basic burger recipe

and use his Italian spice combo

and make sausages this way? He can even have more than one!

If you want to grill them on a BBQ, just make sure they're well chilled in the refrigerator before popping them on and they'll retain their shape, but they cook up just fine in a dry non-stick frying pan on the stove. Just make sure the pan is so hot that a drop of water beads up when dropped into the pan before adding the sausage and let it start to brown before trying to roll it over.
