What is on the menu for today? I haven't decided yet. Make it starchy make it healthy. :D

Good Morning Debbie,

Here is my day:

Breakfast - lots of cooked whole oats with a little bit of blueberries and cinnamon

Lunch - lots of brown rice with a little steamed veggies, black beans, tomato puree and pinch of ground flax

Dinner - lots of potatoes with a little steamed veggies, black beans, tomato puree and pinch of ground flax

Snacks - A banana and/or more potatoes

First Breakfast: Oatmeal with raisins.

Second breakfast: Whole wheat pancake with blueberries made from scratch.

Third Breakfast: Tomato, greens and cuke sandwich on a roll. Banana.

Fourth Breakfast: Rice, mixed vegetables, baked beans

Total calories: 1224.
Carbs: 83%
Fat: 5%
Protein 12%

Haven't decided on my lunches yet. :)

Breakfast: My usual oats. Lately I've done potatoes for breakfast.

Lunch: Green potato soup. Potato soup with greens, dandelion in this case.

Dinner: Don't know yet. Either have to go to the store, or see what's in the freezer.

Oh, should check the Vegan MoFo prompts to see what I need to write about next.

Slept late, so breakfast was just coffee with a squirt of stevia.

Lunch: Leftover Potato Thai Jungle Curry (mostly potato with a bit of baby bok choy, enoki mushrooms, and cilantro in the red curry - no oil)

Snacks and supper will consist of plain baked and mashed potatoes, potentially with a drizzle of malt vinegar and spices, and a small salad of spinach with a drizzle of balsamic.

I'm backing up to primarily potatoes for a few days, as when I have added too much variety I have strayed from plan...so back to simple for me for a few.

I ate leftover pasta for breakfast/lunch and am having left over beefless beef stew for dinner. :)

Found enough cooked potatoes, no need for the store. Sautted them with a package of spinach, seasoned with onion, garlic, salt, pepper, and lemon juice. Afterwards, forgot I had mushrooms that ned to be used, doh!

Also a few slices of German dark bread with white bean/artichoke spread.

What will tomorrow bring?

What is German dark bread? Is that like a dark rye?

Rye or pumpernickel, I can't really describe it. It's not really like most breads. It's somewhat moist, a little sour, chewy, and very dense.

Is the pumpernickel thinly sliced and crumbly if you make a sandwich? If not, mind telling us the brand name? I enjoy the other, but hard to make a sandwich with it. Thanks.
