Pasta salad made with brown rice or quinoa pasta, garbanzo beans and cut up veggies.
Sandwiches made with fat free refried beans on sprouted wheat free bread, tomatoes and lettuce.
Apple with peanut butter
Baby carrots with hummus or veggie dip
Wheat free wraps stuffed with hummus, sprouts, cucumbers, tomatoes - whatever she likes.

I know Jennifer hasn't updated her Vegan Lunch Box blog for a long time, but it still contains loads of good ideas of what to put into a vegan lunch box:

She was plain old vegan for a while but switched to Dr. Fuhrman's Eat to Live plan a while back, so no oils in her recipes.

She also has a book out by the same name, plus a second lunch box book with meals with an international flair, so you can probably get them inter-library loan if you can't pick them up used in a book store (I see http://www.half.com has the original book for $4.88 the cheapest right now, the other close to $8).
