I made the Dill and White Bean Hummus (p. 11) this morning. I left out the tahini, because I don't like it, and substituted some of the garlicky bean cooking liquid for the oil. Was very generous with the dill. This is a very tasty bean spread. Makes a gorgeous sandwich with sliced, fresh tomato.

Note: It is best to use fresh dill in any recipe that uses this herb. Dried dill, in my experience, often has little to no flavour.

Hi vgnwitch!

Thanks for letting me know how you adapted the Dill and White Bean Hummus. What a good idea, using the garlicky bean broth instead of tahini! That sounds like a very tasty substitution, yum! I can never get enough garlic in my food, so I know I would have liked that a lot! :nod: I agree, fresh dill is always best, given the option.

Let me know of any other recipe adaptations you make, I love hearing others' takes on 'McDougallizing' these recipes, it's so much fun!

Love that you are still making your way through this book! It's been fantastic to see your comments and adaptations for making the recipes compliant to this WOE.

I also really appreciate the changes you document so they fit your taste preferences; like your preference for more sauce on your pasta dishes. I think it's important for folks (especially those not particularly comfortable in the kitchen) to recognize these kinds of small, but important, variances in our palates as they can make all the difference in enjoying our foods. Most recipes are far more forgiving of changes than some people might realize.

Wow, thanks for such a nice overview of my 1000 Recipes blog, I really appreciate that! It's nice to know that my comments, observations, and adaptations are helpful!! :nod:

You are so right about the flexibility in this WOE, almost anything can be tweaked to suit a variety of tastes. That can be such a relief when embarking on a new dietary approach.

I will keep 'em coming, and at 6-7 recipes per month, they will be coming for a while yet, LOL! :lol:

Becky, I just found your adaptation of Angel Hair Pasta with olive oil and garlic! I think this is my favorite meal ever and, like you, find it hard to "let go" of the olive oil aspect. I like your idea of using an equivalent amount of vegetable broth instead of the oil. Also, I think adding some lightly crushed black or green olives as a garnish would be acceptable too and add richness without so many grams of fat. I've bookmarked your site for those many days when I need culinary inspiration. Also, love your photos on your travel blog in general, and found the shots of New Orleans interesting. Thanks again and blog on!

Hi Birdie!

Yeah, some of the old favorite comfort foods are harder to give up then others. And while I really don't miss the oil in most things anymore, pasta with olive oil and fresh garlic really was something I use to enjoy a lot. Using a small amount of minced olives sounds like a good alternative, I'll have to try that some time! Thanks for the tip! :)
