Ha! Thanks eXtremE! While I have actually written a cookbook, I have no plans to publish it per se. It's more of a homespun collection of some of my favorite dishes I've collected over the years, some originating in my pre-vegan days, and altered to fit a plant based diet (and not all are up to McD standards! :o ) I've shared it with my children, sisters, and some close friends, but that's about as far as it will likely get! :)

Hi PreciousTaters! Thanks for checking out my blog, and for sharing the suggestions on how you adjusted the Muffaletta Sandwich filling. That sounds like an awesome and delicious way to expand the mix into both a salad and a filling, I'll have to try that next time. :nod: I think my husband would be happy with some sort of sandwich at every meal, so it's always nice for me when I find new and creative ways to build one! :)

The Dijon Vinaigrette salad dressing looks good Becky. Many people here will appreciate this recipe. After looking at your 3 latest creations, I think my fav would be the Red Chard & Baby Spinach Lasagna. You write really good. The words from your blog describing the recipes sound just as delicious as the recipes themselves. :D

On 7/8/2013, I decided to change my diet to a "mostly" WFPB diet. I have always been somewhat lean and muscular due to being a lifelong exerciser. Change in diet due to feeling crummy all the time despite a healthy outward appearance. Image

Thank you Jennifer! :) I'm so glad you are enjoying my blog, that makes me happy! :nod:

We're headed east now; just wrapped up a 6-week stay in Hillman, Michigan, and are now in Johnstown, PA for the North American Vegetarian Society (NAVS) Summefest confernece. Five days of a break from cooking, yahoo! (Yes, I do appreciate a break from cooking every now and then, especially when the food is 100% vegan!) Not to mention the awesome line up of speakers that will be there! :)

This summer we will be touring the New England states and New York.

Wow, I love what you've done in this series. :) I picked up a used copy of 1,000 Vegan Recipes at the Strand when I was in NYC a few weeks ago. I'm looking forward to going through your archive and using some of these great recipes. The Four Alarm Chili is definitely on my list. And the salad dressings. :nod: Thanks for all of this! :thumbsup:

Thanks for checking out my blog and your kind words, I really appreciate that! :) What a funny coincidence, my husband and I just returned from a 5-day visit to NYC yesterday, and the Strand bookstore was one of the places we made a point to visit! What a cool store, what an exciting city (our first visit). I'm glad you have the 1000 Vegan Recipes book and will be able to put some of my ideas to use. I have not read through all the posts yet so forgive me if you've already answered this. I was wondering which recipes if any have become "staples" for you on a regular basis and which ones you think would be especially helpful to someone new to this WOE?
