Interesting.
Jane Brody, however, is committed to so many fallacies about health and nutrition that her help is more damaging than helping. Note her unquestioned assumption of the need to seek out protein in quantity---should you get it from fish, non-read meats, or from a vegetarian diet? Hey, Jane: If you're eating anything other than a corn starch diet, you're getting enough protein. There isn't even any reason to worry about not getting enough protein.
She's a small symptom of the ubiquitous view that nutrition consists of protein (of which we cannot get too much and by which we should measure all foods' value), vitamins, and minerals. Have you ever seen a package that said "10 grams of complex carbohydrate!" on it? Or found a "Complex Carbs Shake" recommended for "a quick breakfast or lunch"?
