I post this occasionally, so here goes again!
I am not sure where it came from--either a McD book or Joanne Stepaniak. And I've made changes to it over the years anyway. It's simple, uses winter veggies, and is SO great and satisfying. Made it last night and am looking forward to leftovers tonight!
HARVEST BAKE
Cut up a bunch of root veggies. I usually use approximately equal amounts of: carrot, parsnip, turnip, potatoes (usually more than one kind--new potatoes and Yukon golds are great), sweet potatoes, onions, and sometimes beets or rutabagas. This time I also added red cabbage and whole baby portabello mushrooms. I make the pieces of everything pretty big.
Put them in a baking dish w/a cover (largest one you have!). Add 1/2 cup water and 1/8 cup Braggs Liquid Aminos (or soy sauce, but IMO Bragg's is better). I sprinkle on cumin b/c I love it, black pepper, and garlic powder.
Cover and cook at 400F for 30-45 min, or until you can easily pierce the harder foods w/ a fork. Serve over brown rice or other grain.
It is very simple but SO YUMMY!!!
