My lazy-girl variation of
this recipe for zucchini pasta/spaghetti.
** Steam
julienned zucchini. I use a potato peeler-like tool for this and chop leftover bits into chunks--they look like gnocchi; you could also use a potato peeler and make fettuccine or just chop everything into small bites for gnocchi.
** Slice a pound of
campari tomatoes in half (or use half a container of Pomis). Place in blender with a small can of
tomato paste. Add desired spices: I used basil and oregano.
** Heat tomato sauce until boiling, simmer for a few minutes.
** A
sweet potato makes a nice addition, too. Great flavor and it helps soak up some of the wateriness.
** Toss together & enjoy!
