SMASHED YUKON POTATOES, BEANS AND VEGGIES
3 small Yukon gold potatoes
1 can chopped tomatoes and okra
1 can (well rinsed and drained) black or garbanzo beans
Microwave the taters. Cut randomly and place in non-stick pan. Smash w/ fork. Cook on medium until browned; turn and brown other side.
Dump in the can of tomatoes and okra. Dump in the can of (drained) beans. Add garlic and balsamic vinegar. Cook on low-medium until warm. Serve.
It's amazingly good and I think I made it up!
Substitute other veggies if you like, but I think you need the canned tomatoes for liquidy goodness.
