Thanks for the updates, Fulenn. That sandwich sounds great! And so wonderful that you got to talking with this retired English teacher and passed the good word around. I hope she takes a look, too.

It's great that you have no new problems. I have to say I don't either, and the plethora of ones I already had are generally much better. I just don't think there's truly a better way to go than this in the long run. So happy we're doing this together!!

Now back to trying to sort out all the frames I ordered for my art show--that and the valentine's day cards up in my store. It's a LOT, and I'm tired, but so glad to be doing it!!

Snow Day!! School Cancelled! Yes, I live in Texas and there was practically no snow where I live, but we only get even a tiny bit every several years. Last night you could almost hear children holding their breath as they hoped for that rare event: snow. We got it! Well, most of what we got was ice and sleet, but that is as rare as the snow. This morning as I slept in, I was woken up by the sounds of laughing children in my neighborhood. That alone makes it worth calling off school for the day. My daughter scraped enough snow together for a nice-looking snowball and I got to make the kids hot chocolate when they came inside. :) 8)

So wonderful! I love the picture of the snowball on FB! It reminds me of when my son was in preschool in Southern California--his preschool would have a "snow" day and bring in a truckload of "snow" to the parking lot where the kids would make snowballs and snow men!! :lol: :lol:

Enjoy your snow day--we actually have none here right now. But it's pretty darn cold.

Thanks, moonwatcher! Your son's preschool had a great idea with their snow day!

I am taking advantage of the cold--it only got down to around 20 last night--and baking a blue pumpkin this afternoon. I should be able to make soup from it just like I would a butternut squash, I hope. The girls are asking for pumpkin pudding, so that is on the menu, too.

This is the blue pumpkin that I roasted back during Thanksgiving break, but it is the same kind of pumpkin, in fact, I bought them both the same week.

Yes, 20 is cold for Central Texas; we only get temperatures like that 2-3 nights per year, I think.

Creamy Pumpkin Soup is really good! Unfortunately, as I was, shhhh....licking the bowl.....I realized that I had not taken a picture. Lucky for me I still have most of the baked pumpkin left and can make another batch tomorrow. Gotta love that VitaMix! I just put soy milk, veggie bouillon, pumpkin, salt, pepper, and a couple of shakes of cayenne pepper in and turned it on until hot. So good! I'll post pictures of tomorrow's batch and a recipe.

We will be making pumpkin pie instead of pudding since my daughters decided that they wanted crust and I still have two in the freezer. :D They don't know it yet, but they will be helping me make them.

I am also putting together a Unchicken Enchilada Casserole, using soy curls in place of the chicken, no cheese--not even Daiya, green tomatillo sauce, tofutti sour cream--should be really good. I'll let you know. This will be the first time I try the soy curls. I found them at a place called Wheatsville Co-op in Austin.

It has been a good week! Here is the current menu:
--mashed potatoes, broccoli
--pumpkin soup
--pizza
--rice casserole
--spaghetti
--rice pudding
--polenta with marinara sauce
--risotto

I never did make the enchilada casserole, but if I think of it I will make it instead of something on the list above.

I continue to feel good. I seem to have recovered from the flu-like symptoms that I had in December and have regained my energy. :) I have no new symptoms from the MS, do not sleep 12-15 hours a day any longer, have not had any more vertigo incidents, generally things seem good. I have not had an MRI since right before I began eating this way and am not sure how insurance will handle payment for it now that so much of the health system has changed, but I will check with my neurologist and ask her when she wants to do one to monitor progress. When I am doing well she is not usually wanting to do one and I tend to agree considering how expensive they are. I sure would like to see what my brain looks like right now, though...

I am getting my hydroponic tank ready to plant some kale, swiss chard, and spinach; I am hoping to get it ready this weekend.

So great to hear how well you're doing, and even considering whether you can afford an MRI to see what it shows about your brain! :)

Now I want to see a picture of your hydroponic tank-- I am very intrigued!! Now off to do the dishes. . .

I'm almost done with all my framing for the art show. . .phew. . .

I was just on your blog reading about your framing--so glad Rose is sold! Such excitement for you with the showing--I truly wish I could be there.

Your pie looks wonderful! There was a pie I used to like when I was in college called Millionaires Pie. It was this awful concoction that was loaded with sugar, but there was pineapple and nuts, too. Your recipe reminded me of this and I will be trying it as a MUCH healthier option. I don't think I could even eat the one I used to, just globs of sweetened fat!

Thanks for reading my blog post about framing and for the good thoughts about the art show--I wish you could be here for it too. I'm hoping my friend Jeanne will get some good pictures of the pictures :lol: :lol: so I can maybe give a virtual tour. We will see how it all goes. I'd like to be able to share it with you and others that way if at all possible. And yes, I'm happy, too, that "Rose" is sold!

Millionaire pie!! Hah! I'm glad my pie reminded you of something so rich--this one's really pretty light, so let me know what you think of it if you try it out.

I finally got around to trying the soy curls that I bought last week. Wow! They are really good! I soaked them in hot water seasoned with soy sauce, liquid smoke, garlic, onion powder, and black pepper. Then I squeezed out as much liquid as I could without scalding myself and sauteed them dry in a frying pan. I used them on a HUGE piece of lavash to make a gigantic wrap along with daikon and carrot strips, a small spread of peanut butter, and fresh cilantro. It made a wrap big enough for me and 3 of my closest friends. :D Here is a picture before I rolled it up.

It has been another week without an MS flare-up. It is very important to me that people see how well eating like this works to stop MS from progressing. My father had MS in the days when Interferons first came onto the market. I remember the first time it was offered it was only to people who really needed something and the manufacturers asked doctors to recommend people to begin receiving it. My father was approached by his doctor, but he turned the offer down saying that he was still walking and that others in greater need could have it. I am still proud of his choice. This is important to me because I believe he could have been saved a lot of trouble from his MS if he had known about this way of eating. The information was already out there, but he did not know about it.

I, however, do know and can tell you how amazing it has been to see my body respond to such a healthy lifestyle. If you have MS and do not believe me, try it and see for yourself. Nobody is asking that you pay any money or take any drugs, rather, that you simply eat differently for 10 days. You can then judge for yourself.

On a lighter note, here is what I ate for dinner tonight, my version of Farley's Bowl: Boiled potato slices, pickled beets, bok choy, water spinach, soy curls, and blackberries.
