Pasta Con Broccoli, just like from when I was a kid.

Pasta Con Broccoli Ingredients

* 16oz (1lb) - Cavatelli noddles
* 2 C. - Fat Free Pasta Sauce
* 1 Can - Black or White Beans
* 1 TSP - Brown Sugar
* 1 TSP - Dried Basil
* 1/4 TSP- Crush Red Chili Peppers
* 1/2 C. - Frozen Spinach
* 2 C. - Frozen Broccoli
(next time I'm going to add even more broccoli)

Yeah gotta agree looks great, got all the ingredients at home. Might have to make this on Sunday. Will let you know how it comes out!

Looks delicious and a short ingredients list!
Whenever I see recipes with a long list of ingredients I'm quickly turned off.

I made a variation on this theme for our lunch today. Yummy, and there's plenty left over to take to work for lunches. I used a full pound each of spinach and broccoli.

Reading the original recipe at The Healthy Vegans the author mentions missing the "cheesy like texture" what would adding some nutritional yeast do to give cheese flavor to the cheese texture?

Better yet now that I am editing my original comment, make an almond Parmesan...comments?

I made this for dinner tonight following the directions, but using a bit more spinach and probably too much pasta when I looked at it. Still it turned out very good. It had good flavor and best of all IT'S HEALTHY! I was so surprised when my 6 year old son ate it, but then he asked for me. Love it! I also hoping to enhance the flavor with some almond Parmesan, made with almonds and nutritional yeast. I tried 2 plates, with and without, both were good, but I don't believe it's necessary.

As a complete to the main course I also made the Quinoa and Chickpea Salad as brought to the forums by velvetelvis. More of the meal review in that thread. Here is what it come out looking like:

Looks Good Steve...I made some too...my hubby loved it(not a full fledged McDougaller)..I added more spinach and left out the broccoli(hubby hates it)..I sprinkled some nutritional yeast on mine, but it really didn't change the flavor.
THANK YOU HEALTHYVEGAN....Hubby really enjoyed this dish...it is going to be a weekly staple in our house :nod:

PS..made a huge pot of this..NO leftovers :unibrow:

outstanding! Glad everyone like this! We are updating the recipe to make it with 2 1/2 cups of Pasta Sauce instead of 2, keeps it more liquid. We've been trying it with various noodles, but the original cavatelli are still my fav
