I made this for dinner tonight following the directions, but using a bit more spinach and probably too much pasta when I looked at it. Still it turned out very good. It had good flavor and best of all IT'S HEALTHY! I was so surprised when my 6 year old son ate it, but then he asked for me. Love it! I also hoping to enhance the flavor with some almond Parmesan, made with almonds and nutritional yeast. I tried 2 plates, with and without, both were good, but I don't believe it's necessary.
As a complete to the main course I also made the
Quinoa and Chickpea Salad as brought to the forums by velvetelvis. More of the meal review in that thread. Here is what it come out looking like:
