I have folders of my fav recipes but here is one of the best and very easy too.
Adzuki Bean Soup with Sweet Potatoes
1 ( 8oz) dry adzuki beans (I buy in bulk section at Whole Foods)
one sweet potato or a yam, peeled and cubed in bite size cubes
4 cups veggie broth and 2 cups water
1 large onion
4 stalks celery
2 tsps each of dried herbs (rosemary & oregano) and 1 tsp sage
1 bay leaf
4 cloves garlic
Spicy pepper blend to taste
sea salt to taste after beans are soft
1-2 tbsps balsamic vinegar (don't omit) after beans are soft
1. Wash the adzuki beans well in several changes of water, then drain and put into a large pot.
2. Saute veggies in veggie broth or water. and then add to the beans.
3. Add the cubed yams or sweet potatoes. and bring all to a boil.
4. Boil rapidly for 15 minutes.
5. Reduce heat and simmer, covered 1 1/2 hours or until beans are nice and soft. When beans and potatoes are done, add the balsamic vinegar and continue to cook for 20-30 minutes. When beans are soft add salt to taste.
6. You may puree fully or partially for a smoother soup but I prefer it just as it is.
7. Serve with slices of good whole grain bread. Yum!
