Rain thank you for the recipes! The Minestrone sounds wonderful. Hopefully someone else will post some more, but there are also recipes all over this site. I do not have any to contribute because so far on McD, I do not use recipes. I just do the easiest things like a microwaved yam and some steamed kale, for example. I will sometimes throw together a kind of hot dish with multiple ingredients, but it is totally free-form and nothing special. :) I love delicious food as much as anyone, but in my case if it is not especially delicious, that is good too b/c maybe then I will eat less. :lol:

I love recipes, but I am also one who does not actually use them much.
I used a veg. soup recipe once, but although it was great, after that I just sort of keep adding what ever I have on hand.
I make sort of pallea, if that is even how it is spelled. Any way dressed up rice. Just add onions, and which ever veggies I have.
Stricktly wing it.
But do keep the recipes coming, they give me great starting points.

I have been making this practically weekly to have on hand for a few days. I am addicted to it, I think b/c I am really missing DH's homemade chicken korma. Our baby (13 months old) really loves it too which I was surprised about!

Lentil and Veggie Stew

Ingredients
3 TB olive oil (omit for McDougall and replace with a little water or veggie broth!!!)
1 c chopped onion
3 cloves garlic, minced
3 carrots peeled and chopped (I always throw in a few more)
3 parsnips peeled and chopped
6-8 brussels sprouts (tough ends removed, chopped) I do a lot more of these too
4 fist size potatoes, peeled and chopped (I've used yukon and red or white sweet potatoes - both great)
1tsp cumin
pinch cayenne pepper
1 tsp coriander
1 tsp turmeric
1 tsp ground ginger
1/2 tsp allspice
4 cup veggie browth
1 cup Puy lentils (I just used regular and they held up fine)
2 tsp salt
3 bay leaves

1. Heat oil (a little broth) over medium flame. Add all chopped veggies and cook until soft.

2. Add all spices (except salt) and continue cooking, just until fragrant.

3. Reduce and add veggie broth, lentils, salt, and bay leaves.

4. cover and reduce heat to a simmer. Cook for 45-60 min. Stew is done when lentils are cooked.

5. Serve over brown rice or as is.

I add some veggies to this (broccoli or okra usually) on the side and it's a great meal! this has a ton of flavor and quite a bit of heat depending on how much chipotle peppers are used. A really quick and easy recipe if you have leftover brown rice too!

Mexican Pinto Beans & Brown Rice

1 tsp cumin
1 tsp coriander
1 tsp cinnamon
1 TB chili pwoder
1 med onion, chopped
3 cloves garlic, chopped
2 C COOKED brown rice
4 C canned pinto beans (or cooked from dried), drained and well rinsed
1 1/2 -2 C veggie stocck
3 TB chipotle peppers,chopped, plus some of the sauce
2 TB tomato paste
1 tsp sea salt

1. Heat a little water or broth over medium heat and add spices until fragrant.

2. Add chopped onion and cook until soft. Add garlic and cook a few min,. more.

3. Add cooked rice and rinsed beans, stock, chipotles, tomato paste and salt. Reduce heat and simmer for 20 min. Serve Hot.

This is one of my absolute favorites. I make it nearly every weekend. I take it to potlucks, and everyone thinks it has meat in it. LoriM used to be a member of this board, and I got the recipe from her:

LoriM's Easy Chili

1 28-oz can of diced tomatoes
1 small can of tomato paste (I use the kind with basil, garlic & oregano)
1 diced onion
1 diced green bell pepper
2 cans red kidney beans
1 can black beans
3 Tbsp granulated garlic
2 Tbsp chili powder
1 Tbsp cumin powder

Steam fry the onion and bell pepper in a pot while opening the tomatoes and paste. (I use a little juice from the tomatoes to saute.) Add both to the pot and stir. Add the spices and simmer. Then dump in the (undrained) beans.

Simmer on medium-low 15-30 minutes until it's good and hot, depending on hunger.

I wish I had recipes to contribute as well but I follow a very simple diet as it helps keep me from overeating and I feel better when I do it.

Hello Autumn. At this point, I am learning to eat more simply, with just a cooked grain or potatoes or winter squash and some vegetables, and I am liking that very much, and it certainly simplifies my life. I only started this thread after reading the post from a woman who said she was getting sick after her meals because she didn't like the food she had to eat on this plan, so I thought she could use some help. :mrgreen:

One of my favorite recipes came from my cousin who got it from a friend, who got it from a friend. But there are similar ones in McDougall's and Esselstyn's books.

Black Bean Salad

Two cans of black beans drained and rinsed
A bag of frozen corn (Trader Joes sweet froz corn is the best)
Two red peppers diced
Cilatro to taste
Small red onion diced (more or less to taste)
Enough salsa to hold it all together (your flavor of choice)

This is good cold as salad or even heated up as soup.

It is good to have some variety as it is hard on the holidays especially. It helps to stick on plan to have some variety when a person is changing over or having a hard time. I treated myself last night to some roasted chickpeas which I rarely eat due to them flaring up my arthritis but it satisfied the craving I had of something crispy.

For a change of pace I make taco salad at times.

Ingredients are :
Corn
kidney beans
red beans
tomatoes
taco seasoning
lettuce and baked corn tortillas.
