This Was Yummy

Postby bunsofaluminum » Wed Sep 22, 2010 6:10 pm

I put together a can of garbanzo beans, drained and rinsed plus about a cup and a half of cooked rice.

Added (Measurements are purely guesswork) :
1TBSP lemon juice,
2 TBSP soy sauce,
1/2 tsp garlic powder,
1/2 tsp onion powder,
1/2 tsp powdered cumin, and
1/4 tsp yellow curry paste (all of the seasonings, just "to taste")

Mixed it all together :shock: SO good! SO-SO-SO-SO-SSSOOOO Good! mmmm, yummy :) hit the spot

If this was just one serving, even two, that's a heck of a lot of salt, even if you used no salt added beans! That much soy sauce is dangerous for a lot of people and certainly won't pass Jeff's sodium test (can't be higher than calories per serving).

That said, this sounds like something my husband would love. Salt doesn't bother him at all!

I didn't actually measure the soy sauce, nor any of the seasonings. It was all "to taste"...that is, until it tasted right. It didn't taste overly salty. Or overly lemony, cuminy or curried. It was just right :)

But, really...2 TBSP to what amounts to about four cups of food? Because a can of garbanzos is about two cups, and the rice was at least a cup and a half...it surprises me that 2 tablespoons of soy sauce would make that much food too high in sodium...

Kikkoman LITE Sodium Soy Sauce
1 teaspoon = 575 mg sodium
1 tablespoon = 3 teaspoons
~~~~~
2 tablespoons = 3450 mg of sodium
Suggested daily amount = 2000 mg sodium
And this is the lower sodium stuff. The regular soy sauce is at least 50% higher in sodium depending on the brand.
yeah, when I looked at my (low sodium) soy sauce, I was astounded that there are over 600 mg of sodium per TBSP, and if I used two, that added 1200!!!! yeah, that's over the calories per serving :lol:
Meanwhile, over the past couple of days, I've decided that salt is a real issue for me. I've never worried about it, and I don't use it in recipes, but do put it on the surfaces of my foods (as Dr M recommends: if you need to taste salt, put it where your tongue will TASTE it) and I use soy sauce w/some things to add the moisture that is missing from not using butter.
from rice dripping with butter, to rice with soy sauce...and it really didn't taste that salty to me. I ate this morning's veggies and baked potato without any added salt and was fine, (cold baked taters have so much flavor, they don't need salt)
however, I have been really craving salty/crispy/fatty foods and even binged (very unhealthily) the past couple of days...gotta get on top of that.
I'd be surprised if you really used 2 tablespoons. I know I give my lite soy two shakes and that is more than enough.
Anyway it is good to break out of the salt habit. You do get use to it.
Part of the reason why I use soy sauce is to juice it up, too. Like I said, butter v. soy sauce? The soy sauce wins, hands down. It provides the little bit of moisture that has been missing since I put butter aside. And I think Faith is right: I didn't use two TBSP...I just tipped the bottle and splashed some on there. A tablespoon, measured, is a LOT.
I still want to get on top of this, though. Salt and fat have just been calling my name in the past week. :\
Okay... now I have to check my soy sauce to see if I read it wrong. I thought it was 575 mg per TBSP, not tsp. Yikes... that is high. Glad I read this thread. :)
Kikko Lite is 575 mg sodium per tablespoon. I still have to use it sparingly. :|
on my soy sauce, the serving size is a TBSP, which is a little over 600 mg of sodium.
Try using lemon juice, cider apple vinegar or other tasty acidic/sour liquid instead of soy sauce. I learned this trick many years ago - we taste sour very close to salty on our tongues. Using a sour liquid can fool our tastebuds into thinking something is salty.
I sincerely apologize! And I should go get my eyes checked! :oops:
Oh, boy! And I even pulled my bottle out of the fridge when replying to the initial post in this thread so I *wouldn't* make a mistake.
Sorry, everyone. I'm going to go crawl into a hole now.
It keeps us alert! :nod: I actually figured I read it wrong because that print is SO small and I often try to read without my reading glasses. lol... But, very glad I wasn't eating that much sodium. Still I need to cut back on it. It just tastes so darn good. :)
:lol: we love ya anyway.
vegan kit, I have a very delicious...sauce? spread?...made with raspberries and chilis that is SO GOOD on rice. And I use vinegar, hot sauce, and other flavorings as well. that's why this threw me off: I know all the "tricks" to keep myself from eating like a fool and yet, I ate like a fool. :roll:
