Pumpkin Cookies from old board?

Not too long ago on the old board, someone posted a recipe for healthy --and yet reportedly yummy -- pumpkin cookies. I was thinking of trying them out for Thanksgiving. I was sure I had printed out the recipe, but I can't find it.

Did anyone happen to save this? I'll keep my fingers crossed; I'm hoping for something to keep me away from the pumpkin pie ;-)

A different pumpkin cookie recipe

This one came from a lady who called herself PumpkinPie on a veg mailing list on Yahoogroups, not the old VegSource board, but it fits with the McDougall guidelines for the regular program.


Pumpkin Raisin Cookies
Makes 24 3-inch cookies
These cookies are plump and moist.

2 cups whole wheat pastry flour
1/2 cup sugar or other sweetener
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup pumpkin
1/2 cup fortified soymilk or rice milk
1/2 cup raisins
1/2 cup chopped pecans or walnuts (optional)

Preheat oven to 350°F.
Mix flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg
together in a large bowl.

Add pumpkin, milk, raisins, and nuts. Mix completely.

Drop by tablespoonfuls onto an oil-sprayed baking sheet. Bake 15
minutes, until bottoms are lightly browned. Remove from oven and let
stand 2 minutes.

Carefully remove from baking sheet with a spatula and place on a rack to
cool.

Per cookie (with nuts): 79 calories; 2 g protein; 15 g carbohydrate; 2 g
fat; 2 g fiber; 73 mg sodium; calories from protein: 9%; calories from
carbohydrates: 72%; calories from fats: 19%

Per cookie (without nuts): 63 calories; 2 g protein; 15 g carbohydrate;
0.2 g fat; 2 g fiber; 72 mg sodium; calories from protein: 10%; calories
from carbohydrates: 88%; calories from fats: 2%

The most recent post on the old board that I remember was someone who used the oatmeal cookie recipe on the Quaker box but substituted canned pumpkin for the fat. Could that be the one?

Yes, that rings a bell, now that you mention it. Were there other adjustments made to the recipe, do you remember?

Of course, maybe I should try both and see which I prefer :D

Sorry, I really don't remember. I can't even remember who it was that posted. It wasn't that long ago, but ever since I entered my 50s my short term memory is just not what it used to be. :-P

Sorry this is so late. I made some of the Pumpkin Oatmeal Cookies, after Shari posted about them. They were pretty good!

I did mine a little different than she did. Here is my recipe, based on hers.


Pumpkin Oatmeal Cookies

3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 15 oz. can solid pack pumpkin
1 tsp. vanilla
1 1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt (opt.)
1 1/2 t. pumpkin pie spice
3 c. oatmeal (quick or old fashioned, uncooked)

Preheat oven to 375 degrees.

Mix together pumpkin, sugars and vanilla.

Combine flour, baking soda, salt and spices; add to pumpkin mixture, mixing well. Stir in oats. Drop by rounded tablespoonfuls onto lightly sprayed cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire cooling rack. Store in tightly covered container. 4 1/2 dozen.

Notes:
* My cookies take 10 minutes

* These do not spread (no butter) so you can crowd them onto the cookie sheet. I use a small scoop thing and lightly flaten the balls with ta lightly sprayed measuring cup.

I have that recipe too. My son just made them the other night. They are one of our family favorites!
