Breakfast: leftover veggie pizza

Lunch: chili over rice

Dinner: Mac n cheeze (trying a vegan friendly recipe for my boys because they love mac n cheese)

I need to work on getting rid of the oil. I don't use much, but occasionally in a recipe or a little earth balance.

Lunch: leftover Mac n "Cheeze" from the night before


Dinner: Green salad w/ cucumber, lettuce, tomato, carrots, red onion & pasta w/ mushrooms, shallots, garlic

Weight: still maintaining (happy as can be about that... maintain or lose - I'm great with both) Slow & Steady! :)

Breakfast: whole grain toast w/ tofutti cream cheese, banana

Lunch: garbanzo bean spread, and a small portion of leftover pasta w/ veggies

Dinner: vegetable pie :)

Breakfast: Hashbrowns


Lunch: Potato Soup w/ broccoli, onions, garlic, light soy milk


Dinner: Grilled portobello mushroom burgers... whole grain bun, onions, avacado, tomato, and corn on the cob.

I have to say I was a bit nervous about the mushrooms used as burgers, but it turned out delicious and light and tasted much like eating a real burger, but felt nothing like it. :)

Brush on a little bit of vegan worschestershire sauce on the mushroom and it will have even more of that steak flavor.

Breakfast: Plain brown rice w/ table tasty seasoning, banana

Snack: 2 corn tortilla's filled with fresh avacado, tomatoes and cucumbers

Lunch: Boiled red potatoes with corn and peas

Snack: Boca Burger on whole grain bun with mustard and tomato

Dinner: Corn totillas with salsa

Lunch: Saltine crackers - to deal with horrible reflux because I ran out of one of my medications yesterday and had trouble filling it today. Couldn't eat anything else... hopefully later.

Dinner: We are supposed to have veggie pizza... :) I hope so, cause I am hungry for something other than crackers.

Weight Loss: 6 lbs YAY! I was pleasantly surprised by that number this morning. :D That is in just 4 days, and I can tell by my feet that my edema is pretty much gone. It is a side effect of the prednisone and I am very excited to be going off it. Hopefully by the end of the year. :)

So the doctor is weaning you off the pred? That is great news if he is! I had a friend who was on it for a while and lost a lot of weight when she went off. Like 25 pounds or so, it was pretty dramatic. Of course, your healthier heart and kidneys are helping get rid of excess water too! :thumbsup:
It IS the food! :unibrow:

I started at 40 mg in July and am not at 15 mg as of Sunday. :D My next appointment is mid-november and I am going to tell him to get me off asap! I hope it will just be a matter of a few more weeks.
