October Food Journal ~2010~

Note: For those interested... my menu is based on research I have done on this website regarding McDougall eating and kidney failure. I am not following the MWL Plan specifically as is obvious by food choices, but weight loss is also one of my main goals. I have to watch my levels of protein, potassium, phosphates and sodium. I will typically put my menu up in the morning for what I plan to eat and then edit any changes at night and leave notes about it.

Breakfast: 1 Thin Whole Grain Bagel/2 Tbsp. Tofutti/1/2 grapefruit

Snack: 1 oz Baked Tostitos/1/2 cup brown rice mixed with 2 tbsp. hot Salsa

Lunch: Sandwich with 1 whole grain pita/1/2 cup garbanzo beans smashed w/1 tbsp. veganaise & 3 small sweet pickles/ 1 apple

Snack: 1 cup Red Grapes/1 cup tomato & 1 cup cucumbers/i cup cold cauliflower

Dinner: 1 cup Whole grain pasta/1/2 cup tomato sauce/1/4 cup mushrooms

Note: got a bit hungry in the afternoon because I ate lunch too early so added the veggies for an afternoon snack. Went a little high on my protein today, but overall - great day.

Weight Loss: 4 lbs :) happy to be getting rid of water weight

Breakfast: 1/2 cup oatmeal/1/2 cup soy milk/1 tbsp brown sugar/cinnamon/vanilla

Snack: whole grapefruit/veggie sticks

Lunch: Lunch: Sandwich with 1 whole grain pita/1/2 cup garbanzo beans smashed w/1 tbsp. veganaise & pickle relish, 1/2 cup celery/

Snack: potato/seasoning/grapes

Dinner: Nacho Bake (Baked Tostitos, corn, beans, tomatoes, peppers, olives, tomato sauce)

Weight: maintained/no loss or gain

Breakfast: Nacho Bake (leftover dinner)

Snack: Rice Thins/Potato

Lunch: PB & J Sandwich (ww bread)

Snack: Baked Tortilla Chips/Salsa

Dinner: Burritos/whole grain flour tortillas, black beans, brown rice, various fresh chopped vegetables, salsa, corn

Weight Loss: 1 pound :)

Breakfast: Brown Rice/Nacho Bake

Lunch: Brown Rice, Black Beans, Corn w/ salsa/ lettuce salad with fat free dressing (green peppers, mushrooms, tomatoes, red cabbage)

Snack: Grapes

Dinner: Baked potatoes/veg. baked beans

Weight Loss: 1 pound (6 lbs in 5 days so far - feeling great and happy with results) This weight loss is based on a monthly goal. I have lost 35 pounds since July reaching my 100 pound goal, but now I have 100 pounds still to lose and am doing it with a vegan lifestyle which started in September.

Breakfast: Potato w/ seasoning

Snack: apple/veggie sticks

Lunch: Rice, bean, mushroom & spinach burrito /

Dinner: Garbanzo bean spread/sandwich

Debi, the fact that swelling is going away means your kidneys are doing the job rather well, don't you think? I can't wait to hear the next doctor's visit report! :-P

Have you read Dr. Esselstyn's book on heart disease? I'm reading it over again now, and was again impressed with the stuff on artery walls. Your artery walls are getting healthier, and that has to help blood flow to your kidneys.

I am excited about my next doctor visit too. :) It is hard being patient.

That sounds like a book I need to read. I watched a video about vegan eating... vegangirl.com and it was really good. She talked about healthy bloodflow and organ health because the blood caries oxygen so when it is all gummed up with fats and sluggish... less oxygen. Great video.

Weight Loss: didn't weight today

Breakfast: Cold cereal/almond milk

Snack: veggie wrap with cucumber, tomato, kale, spinach and a whole grain tortilla

Lunch: Brown Rice and Broccoli

Dinner: Beans with rice and corn tortillas

And now that I am looking over my menu today - odd that I didn't have any fruit.

Dinner: Shepherd's Pie (which was so delicious... potatoes, mushrooms, onions, corn, peas)

Went away on a mini-vacation for three days with my husband. We took all our own food to the condo, but ate out a couple of times. Once Mexican and once Sushi. It was perfect. We ate great, still lost weight (although I am not sure how much yet) and got lots of exercise and relaxation. So that is why there is a three day gap in the journal. :)
