That Fresh Cherry Smoothie looks very appetizing. Is this like a treat? Also, love the looks of the Red Bean Jambalaya. After you test 1000, you should turn your blog into a book. :D
On 7/8/2013, I decided to change my diet to a "mostly" WFPB diet. I have always been somewhat lean and muscular due to being a lifelong exerciser. Change in diet due to feeling crummy all the time despite a healthy outward appearance. Image

Hi eXtremE, and Happy Holidays! Yes, the Fresh Cherry Smoothie was like a treat, quite rich as it included a handful of cashews. Not something I would recommend for everyday fare, but I indulged myself since I was recovering from some dental work and could only eat soft foods for a few days. :) My blog would be a huge book in the end, huh? ;)

Hi Becky,

I just checked out your blog. It looks like a fun (and huge) project.

I clicked on the pizza, sandwiches & more section and the first thing that popped up was the mexican-style pizza, one of my favorite things to make! Mine's quite different, I usually put refried beans on the bottom, and some oven-grilled vegetables (a la fajita), then after baking I add salsa, lettuce and cilantro, and perhaps some cubed avocado. I find all those different textures are so satisfying. I'll have to try the one you posted and compare!

Hi Danielle! Thanks for checking out my blog! :-D You're right, it is definitely a huge project. Years long, I figure, but I am about 1/3 of the way through. But I'm having a lot of fun with it. I love to explore new recipes!

Your version of a Mexican Style pizza sounds delicious! It reminds me of a Mexican pizza I used to order from a pizza chain, right now the name escapes me. This was back in my SAD days, and it included ground beef and cheese. :oops: Your version sounds much more delicious, not to mention leaugues healthier!! :nod:

Let me know if you do end up trying the "1000 Vegan Recipes" version, and what you think!

Great to see you again Becky. I have not had raisin bread since I was a kid, but I remember it. I don't have any bread in my diet currently but this really looks delicious and would certainly jazz up my simple meals. The Beer-Marinated Seitan Fajitas look interesting. What beer did you marinate in? Did you drink what was left over of the beer and got yourself a little buzz? :D I have never been really into soups but I would love to get my hands and teeth into that Banana Walnut Cake. I can't believe you are as slender as you are with all these delicious looking meals. They would probably make me wanna overeat. Thanks for sharing.

Hi eXtreme, nice to see you again too! Thanks for checking out my blog and sharing your thoughts on the different dishes I've tried lately, I'm still plugging away at them…slowly…! For the Beer Marinated Fajitas, I used Modelo Beer, a Mexican beer, only fitting, right? ;-) And yes, I did drink the rest of the can after I used the ½ cup the recipe called for, ha! :oops: I don't know about the buzz though, not really enough left to make it worth it!

As for our monthly grocery bill, it can really vary depending on where we are. Since we travel full time in our 5th wheel, food availability, as well as prices, can be significantly different from month to month. Last year we spent two months in Hawaii (left the 5th wheel behind for that journey! :lol: ), and our groceries went up quite a bit!! But I am kind of obsessive when it comes to tracking our expenses, and I can tell you exactly what we spend each month on groceries, lol! In 2013 our average cost of groceries (food items only) came to $685 per month. I think that probably runs a bit high for just two people, but I'm not really sure anymore. I know I am not opposed to spending extra at times for specialty items, but I know for sure two people could eat well on a lot less. I also can't buy too much in bulk, which saves money, since we live in small quarters.

What is average for two people for groceries, I wonder? I'll have to look that up!

P.S. On the grocery bill topic..when i take our yearly grocery bill and divide it by 52 weeks, it turns out our average weekly $$$ spent on food comes out to approximately $158.

Great to see you Becky. Have you been able to avoid the cold weather with all the traveling that you do? LOL

Your latest 3 additions all look scrumptious. Ofc, the Chocolate Chip Cookies are my favorites but you knew that right? :D
I think that Creamy Cucumber Dressing looks like something I would really enjoy on my salads. Ppl here are always looking for healthy salad dressings. I could have used a big bowl of that soup a week ago....it was really cold here.

Hi eXtremE! Yes, for the most part, we have been able to avoid the cold this winter, since we are staying in the Sacramento, California area this year to be with family. We usually make it a point to be in the southern half of the country during the winter months. Sounds like you live in the colder parts of the country?
