No Fat Lemon Vinaigrette

Serves:Makes 1/2 cup


  • 1/2 cup fresh lemon juice
  • zest from one lemon
  • 1 tbsp rice vinegar
  • 1/4 cup white wine
  • 2 shallots, minced
  • 3 cloves garlic, minced
  • 3 tbsp sugar
  • 1 tbsp water
  • 1 tbsp cornstarch
  • salt and pepper to taste


Blanch the lemon zest in hot water to remove the bitterness.

Combine the rice vinegar, white wine, sugar, shallots and garlic in a stainless steel sauce pot and bring to a boil.

Combine the water and cornstarch to make a slurry and whisk it into the white wine mixture. Turn this liquid down and allow this to simmer for 3 minutes then cool.

When cool add the lemon juice and the zest and season to taste.
