Niter Kibbeh is a spiced clarified butter used in Ethiopian cooking. This version is butter-free. Use it to add depth to slow cooked stews, vegetables, or even tofu.
- 2 quarts vegetable stock
- 1/2 cup Spanish onion, chopped
- 1/2 cup garlic, minced
- 8 tsp ginger, grated on a micro-plane
- 2 tsp turmeric
- 20 green cardamom pods, crushed
- 4 cinnamon sticks
- 10 whole cloves
- 1/4 tsp fresh ground nutmeg
Slowly heat the vegetable stock in a medium-sized saucepan over low heat.
Add the other ingredients and simmer uncovered on the lowest heat for about 20-30 minutes.
Strain the mixture through a double layer of cheesecloth.
Refrigerate until needed.
