Rice and Beans in a Bowl

Prep: 5 minutes (need cooked rice) Cook: 5 minutes



  • 1 cup cooked brown rice
  • 15 ounce can red or pinto beans, drained and rinsed
  • 1 cup lettuce, shredded
  • 1 cup tomato, chopped
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup cilantro, chopped
  • 3/4 cup salsa


Place the rice, beans, and half of each of the vegetables (not the salsa) in a microwave-safe bowl. Mix well, cover, and microwave on high for 3 minutes. Stir well and microwave for 2 more minutes. Stir in the remaining ingredients. Serve at once.
